Hot Chocolate Cookies


We turned everyone's favorite cozy drink into a cookie! What could be better than a hot chocolate cookie topped with delicious, vegan marshmallow? These rich chocolatey cookies pair perfectly with a cup of coffee or a mug of hot chocolate!



We followed a marshmallow recipe we found online, but these cookies would also work with store bough vegan marshmallows. No matter what type of topping you choose, these cookies will curb your sweet tooth!

 

Yields 12-14 cookies


Ingredients

  • 5 Tbsp softened vegan butter

  • ½ Cup sugar

  • ¾ Cup 1:1 gluten-free flour

  • 1 Tsp guar gum

  • 1/4 Cup cocoa powder

  • 1 Tsp vanilla extract

  • ½ Tsp baking soda

  • ¼ Tsp sea salt

  • 2 Tbsp plant milk based on how dry the dough seems

  • 2 Tbsp unsweetened applesauce

  • ½ cup vegan chocolate chips

  • Vegan marshmallows (or make your own)

  • Optional: melted vegan chocolate (to drizzle)

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a silicon mat.

  2. Cream together the butter and sugar using a stand mixer or hand mixer.

  3. Once combined, add the vanilla and mix.

  4. To the mixture, add flour, guar gum, cocoa powder, baking soda, salt, plant milk, and applesauce, and combine until a dough forms.

  5. It may seem crumbly, if this is the case use hands or spatula or further combine.

  6. Add in the chocolate chips and mix with your hands or a spatula until they are evenly distributed.

  7. Roll dough into balls slightly bigger than a tablespoon.

  8. Place on the baking sheet and flatten slightly while also using your thumb to create an indent in the cookie for the marshmallow.

  9. Bake for 10 minutes and using a spoon, indent the cookies again.

  10. Bake for another 5-10 minutes, until the outside of the cookies appear to be cooked.

  11. Remove from the oven, and add the marshmallows.

  12. Allow cookies to cool for 5 minutes on the baking sheet before transferring to a cooling rack.

  13. After cookies are completely cool, melt chocolate and drizzle over the top.
