Soft and Chewy Cinnamon Cookies




One of our favorite flavors of the winter season is definitely cinnamon. On cold and snowy days, cinnamon is the perfect way to spice up a drink or a baked good!





These cookies are the perfect creation for any cinnamon lovers out there! They are soft and chewy, while still managing to have some crunch on the outside from the glaze. And better yet, they are only 8 ingredients!




After making these cookies, you will realize that they will make the perfect addition to any cookie tray you are making this season!


 

Ingredients

  • 2 Cups almond flour

  • 2 Cups powdered sugar

  • 1 Tbsp cinnamon

  • ¼ Tsp Salt

  • 2 Tbsp almond milk

  • 1 Tsp vanilla extract

  • 1Tbsp coconut oil

  • ½ Tbsp lemon juice


Glaze

  • ⅓ Cup powdered sugar

  • ½ Tbsp lemon Juice

  • 1-2Tbsp almond milk


Instructions


  1. Combine the almond flour, powdered sugar, cinnamon, and salt in a bowl and mix to combine.

  2. Add in the vanilla extract, almond milk, lemon juice, and coconut oil, and using a hand mixer, mix until combined.

  3. Using your hands, mix the dough more thoroughly and form into a ball.

  4. On a floured surface, roll out the dough to about a ¼ thickness.

  5. Using a tree cookie cutter, or a cookie cutter of choice, cut out about 20-24 cookies depending on how thick the dough is.

  6. Add cookies to a sprayed baking sheet, or a silicone mat.

  7. Cook at 350 degrees F for 8 - 10 minutes.

  8. Allow to cool on the cookie sheet for 10 minutes and then move to a cooling rack.

  9. While cookies are cooling, make the glaze by combining the glaze ingredients to a bowl and whisk to combine.

  10. Once the cookies are completely cool, apply the glaze to the cookies using a basting brush, or dip the cookies in the glaze.

  11. Allow glaze to set on cookies and harden.

  12. Store in an airtight container for 7-10 days.
